Thoughts From a Weekend

Things are so busy lately.  So busy and our internet at the house has been faulty so excuse my lack of blogging.  I've missed y'all.  Have y'all been busy bees, too?

Last time I mentioned how excited I was about the new Mumford and Sons album, and let me tell you, it is incredible.  (Don't worry, Lisa, I have a copy ready for you).  Their music just touches my soul every time I listen to it (which is a lot).  It's funny how I wasn't in the right mindset to appreciate them two years ago, but cannot get enough of them lately.  Their lyrics are beautiful.  If you get the chance listen to Babel, Whispers in the Dark, Lover of the Light, and Below My Feet.

This weekend involved lots of R&R, including a much needed visit to the local spa.  The girls and I took a day dedicated to the spa and it was perfect.  Turns out that the lovely woman who gave me my facial is also our neighbor.  Only in a small town...

Thank God for pay day, because we are no longer in the Great Teacher Depression.  We stocked up on groceries for two weeks on Friday evening.  Somehow on Fridays we, the teachers, get a little looney (proof below).  We say things we wouldn't normally say, do things we wouldn't normally do, and I think it is due to the fact that we lose a few brain cells throughout the week.

Try this guilt-free tuna salad recipe, I made it in bulk for my roommates and I so you may want less mayo for one can of tuna:

  • Greek Yogurt (eyeball it)
  • Mayo (1 Tablespoon)
  • An apple cut into small pieces
  • 1 can of tuna
  • Grapes cut in halves
  • Craisins
  • Celery
  • 1 hard boiled egg
  • Salt and pepper

The Great Teacher Depression

Easy like Sunday morning...

I made the executive decision to include pumpkin in my diet today, it is the official start of fall after all, so that makes it okay, right?

Sunday morning breakfast was a bit of a splurge for the week.  It included Bisquick Pancake Mix, vanilla extract, baking powder, dash of sugar, six tablespoons of pumpkin, a teaspoon or so of pumpkin spice, an egg, and some milk.  MmmmMmmm was it tasty!  I present to you, pumpkin pancakes...
There was no burning happening in my kitchen, the orange mix just took to a darker color :) 
Remember, these boots? I think they may arrive TOMORROW!! How's that for an exciting Monday afternoon?! I cannot wait to wear them.  I think I will transition from What I Wore Wednesday to Fashion Friday.  I think we can all agree that my Casual Friday work clothes are way better than my business casual Wednesday clothes.  Fashion Friday will therefore commence this week.

Friday is pay day, and it cannot get here soon enough.  The roommates and I are treating ourselves to a Spa Day and a movie.  You see, the last time we got paid was mid-August.  This, my friends, is what I like to call The Great Teacher Depression.  We, the teachers, on a low-paying salary and working our butts off every day of the week, weekends included have to wait 6 weeks between paychecks....AHHHH.  As a result, here is what our fridge now looks like.  Essentially, we are living like poor college students until Friday.

While the fridge may appear to be stocked, let me tell you all of what is in there.  Condiments, sour cream (running low), butter (running low), eggs, beer, cider, skinny girl margaritas, water, Acai Berry Juice, Syrup, pumpkin puree, an apple, Special K protein shakes, pasta sauce, lettuce, tortillas, celery, carrots, kale, and tomatoes.

We will be eating rice, corn, beans, quinoa, and Annie's Mac & Cheese for the next couple of days.  Then, next weekend, it is off to Sam's to stock up on the essentials.

No right now

Sometimes you just have to learn to let go.  Let go of someone for some time before you can decide to let them back into your lives.  That's exactly what I'm doing.  I don't need to justify it to anyone and I have made the executive decision not to attempt to give an explanation.  By justifying and explaining I would be doing it for someone else, and not me.  So there's that.  Maybe life will take a new turn in six months, in eight, or in twelve and our paths will cross again.  For now, I am choosing to say no.  Not no never, just no right now.

I recently re-took the Strengths Quest and discovered that my strengths have changed since I was a junior in college.   My five strengths are currently listed as:

- Input - people who are especially talented in the input theme have a craving to know more.  Often they like to collect and archive all kinds of information.
- significance - these people want to be very important in the lives of others.  They are independent and what to be recognized.
- Discipline - people who are especially talented in the discipline theme enjoy routine and structure.  Their world is best described by the order they create.  
- Positivity - people who are especially talented in positivity have an enthusiasm that is contagious.  They are upbeat and get others excited about what they are going to do.  
- Belief - people who are especially talented in the belief theme have certain core values that are unchanging.  Out of these values emerges a defined purpose for their life.  

I hope that's pretty accurate.

Do you see that beauty above? That is Tortilla Soup that my roommate made purely from her AMAZING Vitamix machine.  The soup actually heats up in the blender alone.  Isn't that fascinating?  It was amazing, and I cannot wait to take some for work tomorrow morning.  On my early Christmas wish list? Um, a Vitamix please!

Obviously the stars have aligned and this is almost too good to be true, but I am way too excited about this graduate program that sounds perfect for me.  Can it be any more of a coincidence that it, A. doesn't require a GRE, B. is in Seattle, and C. is top-ranked?!!  

I am trying not to get myself too psyched, but it's official that my application for graduate school begins NOW.  I am calling my career counselor from college and focusing on this so that I can make the December early deadline.  May have to take a human biology course next semester, but SO WHAT?!!! Seattle is becoming a bigger and better possibility for my future.  Oh, Pacific Northwest I just have the best feeling about you.  

Also, I called my mom and I think she can accept this.  She sounded happy and excited for me.  I need to prepare her psychologically for this possibility.  Prayers, prayers, and many prayers for this opportunity please.  

On a different note, my dear sweet Lisa posted the first photographs from our shoot this past weekend.  She did an INCREDIBLE job, go take a look and leave her a comment.  Seriously hiring this girl for my wedding one day.  I cannot wait until the film shots come in.

Dominguera

It's the end of the weekend.  As soon as I am done here I better head out and relax as much as humanly possible in order to prepare mentally and physically for the first week of school.  I really think teachers get much more anxiety than students do about this.  I have so much to post about, but that will come soon enough.  

Yesterday I had to go to Professional Development for Teach For America in Baton Rouge.  I actually enjoyed my drive.  It was quite lovely.
The swampland I drive by on the way to BR.  Sometimes there is an old broccoli smell.  That's not so pleasant.
I made an amazing Lasgna soup recipe that I got via pinterest.  Substituted ground turkey instead of meat and used two italian sausage links.  Ricotta was reduced fat, too.  
Topped with mozarella and fresh basil.  As good as it sounds. 
Tomorrow I will hit the gym again.  It is a MUST.  I need to check out my Yogalates classes and whip myself back into the routine.  It's so difficult to transition yourself and feel at "home" again.  I struggle with this every time.  I miss my mom an awful lot, too.  When can I see her again?  Probably October, unless she comes to visit me.

Le petit déjeuner

Happy Saturday everyone!

Just sipping on a green monster smoothie post-spinning.  I didn't originally have plans to work out today, but my nephew decided he wanted pizza last night and, well, the rest is history.  I decided a morning of cardio was just what I needed to lessen the late night pizza guilt :)
My quads were killing me so I didn't do a great job with the sprints, but nevertheless I made a great healthy decision and walked off the soreness on an incline for fifteen minutes afterward.  It is mornings like this when all that motivation talked about here really comes in handy!

I'd like to take the time to mention to y'all a couple of my favorite healthy foods.  Sometimes we are stuck in a rut and can't figure out what to snack on, or what to have for breakfast.  I typically workout before I have an actual breakfast and so my pre-fuel for my workout typically consists of either 1) an apple, 2) peanut butter toast, or 3) a banana.  I think I'm going to start adding a cup of greek yogurt to that list though, because of the fat burning benefits.  Gotta tackle that belly fat.  When I get hungry between meals and I DO (I take this as a great sign that my metabolism is high and those workouts are paying off), I typically grab some of the Emerald Cocoa Roasted Almonds.  If you typically don't eat nuts and get thrown off by the fat content, well, don't. Yes, it may seem like a lot of fat for such a small baggie, but remember that nuts are a good fat.  These have minimal sodium (15mg) and are lightly and naturally sweetened by the cocoa powder that covers them.  Almonds help to curb my apetite and make me feel full until my next meal.

YUM! You can also purchase simply roasted with no cocoa.  
Other snacks I might consume are pieces of fruit (apples, cherries, strawberries) or the low sodium tiny V8 vegetable juices.  I like to keep my sodium intake to a minimum considering salt retains water and no one wants to look bloated, especially in the summertime.  I might have one or two V8's a week.  Some say the low sodium ones are not as tasty as the regular sodium, but you get used to the difference in taste.  For breakfast (mmmm best meal ever) I am a huge fan of the Green Monster that I mentioned above.  If you have not tried this before, do NOT be discouraged by the looks of it, I swear it tastes AMAZING.  There is a whole Green Monster cult-like fan club out there, I promise I'm not a part of this (sort of).  There are just so many great benefits to drinking these regularly.  Appearance in skin, energy, and even a decrease in cravings for sweets (SO TRUE).  Check out the Green Monster Movement that I hope inspires you to try it out.  The Green Monster makes a great breakfast on it's own, or a snack.  If you'd like to make one now, here's a basic recipe:

Ingredients:
  • 1 cup of milk of choice (I usually use regular milk or almond milk)
  • 1 ripe banana
  • 2 handfuls of fresh spinach (you can add more or less)
  • Ice cubes (1-4)
Optional Items:
  • Greek Yogurt (I find that it makes it creamy and dreamy)
  • Chia seeds or flax seeds
  • Nut butter (peanut, almond, sunflower seed)
  • Berries
Instructions:
Start with the liquid, add milk first, then spinach followed by the banana on top.  Top with ice cubes and blend until smooth (typically about 2 mins).  Serves 1-2 cups.  

Don't be like me and put your ingredients in the correct order ;)
The more spinach, the greener.  The less, the more brownish it will look.  But regardless, it'll be tasty
Another breakfast favorite of mine is something light, but protein-rich.  One that I keep coming back to lately is an egg sandwich on pita bread with goat cheese or salsa and spinach.  I should probably tell you that spinach is one of my favorite foods, I can eat it every day and with almost anything.  My third dream job is to become the next Popeye.  I use a poached egg rather than fried, scrambled, or other cooking methods.  With a poached egg I don't have to use any additional oils and I love how pretty they turn out.  If you'd like to scramble yours and make it just egg white, I'm sure this would work too.  I love yolk, and I like my eggs runny.  I don't eat them every day and therefore I'm not too concerned about eating the yolk.  I use whole wheat pita bread pockets because it is low in calories, low in fat, and it doesn't have the sugar that regular bread contains.  You can replace pita bread with basically any sandwich recipe, it's awesome.  Lastly, goat cheese.  Best cheese ever!!! I seriously adore goat cheese, with almost anything.  If you haven't tried it with eggs you absolutely should go do that right now.  The combination is flawless.  I usually pair this meal with some fruit on the side.  Mmm mmm mm.

This one is missing the spinach because I was out.  Make sure and put some in there,  it makes it look colorful.
In regard to how much I eat, I don't really count calories.  I find that excruciating and because I'm a control freak that probably wouldn't be good for me.  I typically know how many calories my food is and I try to keep the meals lower in calories so that I can truly see the benefits from my workouts.  That doesn't mean I eat less.  I definitely don't, just healthier.  Smaller meals, lower in calories and rich in protein at times to keep me feeling full.  That's enough foodie stuff for today.  I promise I will share more another day.  Feel free to ask me any questions about the food.  Enjoy!
